Hey, do y’all know where the tapas craze originally came from? They were invented by the Spanish as an inexpensive taste to accompany wine. There are classic, straightforward tapas — a taste of serrano ham, for example — but tapas are often playful experiments, too, and thus also reflect contemporary tastes. The closest we get to real Spanish style is PURA VIDA. Chef Hector Santiago’s menu is pan-Hispanic as well as Spanish, including everything from earthy Peruvian mofongo and Chilean salmon ceviche to Spanish omelets with pearl onion confit and a kinky Mex-style shrimp cocktail with calabaza squash and coconut-ginger habanero sauce.
